Meal Plan for 9/1-9/7

It has been a LONG TIME since I’ve shared our meal plans. Honestly, meal planning is a bit complicated now since I work in the kitchen. My schedule is kind of all over the place, and we eat some meals in the dining hall.

I’m trying to eat much healthier now, so even when I am working, I tend to take food. My cholesterol has gone up even more lately (probably due to camp food), so I’m back on medication for it and also trying to be super intentional. It’s difficult and takes a lot of planning and work, but I’m getting there.

Since I’m working full time and the boys are back in school, I am buying some pre-prepped/pre-made foods, and I’m okay with that. We have more wiggle-room in our grocery budget, and it makes a huge difference.

I do my meal plans as lists now so that I can pull from them and make meals based on the staples that we keep around. I did plan a few specific dinners as we will be home for some this week.

Breakfast

  • Pumpkin apple protein oatmeal (I don’t use milk or coconut oil anymore)
  • Eggs, whole wheat toast, and fruits/veggies
  • Smoothie with whole wheat toast
  • Overnight pumpkin spice oats
  • Protein (Kodiak) pumpkin pancakes and fruit
  • Eggs, Pumpkin zucchini banana whole grain muffins, fruit

Lunch

  • Snack plate: protein, fruits/veggies, high fiber carbs
  • Bagged salad with shredded rotisserie chicken
  • Rotisserie chicken, potatoes, and zucchini/yellow squash
  • Leftovers

Dinner

  • Chicken coconut curry and rice
  • Street Parking “Viral Bowl” (taco beef, zucchini/squash, sweet potatoes, cottage cheese, hot honey)
  • Homemade pizza
  • Red meat sauce with protein pasta, ravioli, and zucchini
  • Leftovers

Snacks

  • Raw veggies and hummus cup
  • Boiled eggs
  • Greek yogurt
  • Cottage cheese
  • Fruit
  • Greek yogurt and granola
  • Muffins

Food Prep

  • Roast potatoes
  • Shred rotisserie chicken
  • Bake muffins
  • Make meals for the next day each evening (or morning)

I’m working on a food inventory, and I plan to share that soon as well. I still shop like we live over an hour away from the grocery store. Part of it is because that’s how I shopped for almost 9 years, and part of it is because I just like having a large stock of food to choose from. With our schedule being as busy as it is, it’s nice to not have to run to the store constantly (even though it’s close).
