Pumpkin Apple Protein Oatmeal

I created a new favorite breakfast! It’s seasonal and has protein, carbs, fat, and freggies (fruit/veggie).

Just a reminder: this is not a food blog so I do not have it set up to print the recipes.

Ingredients

  • 3/4 cup water
  • 1/4 cup milk (I use dairy free)
  • 1/2 cup, Rolled oats
  • 1 tbsp, Coconut Sugar (or brown sugar)
  • 1/4 tsp(s), pumpkin pie spice
  • 1/2 cup, Egg white
  • 1/3 cup, Apple
  • 1/4 cup, Organic Pumpkin

Procedure

  1. Bring milk and water to boil.
  2. Add rolled oats.
  3. Boil for 10 minutes.
  4. Whisk in pumpkin, coconut sugar, pumpkin pie spice, and egg whites. Keep whisking constantly to keep the egg from scrambling.
  5. Pour the oatmeal into a bowl and top with diced apple and a sprinkle of cinnamon.

Additional adjustments:

If you’re not feeling pumpkin, you can add sliced banana and strawberry, blueberries, or any fruit that you like!
